There are some great storage shelves available now that allow you to load in your cans in the top and then they come out the bottom enabling you to use your oldest items first.
As for processing, if you are talking about home canning not a lot has changed recently. The pressure canners are better quality, and there are machines available to help you properly seal #10 cans which are great for storing dried items.
